Coconut Crusted Wahoo

A great recipe used at Matava - Fiji's Premier Eco Adventure Resort:

Coconut Crusted Wahoo
(Serves 4)
8 pieces of 3-oz. slices of wahoo
2 limes
8 oz. coconut flakes
4 oz. flour
3 eggs
2 oz. chopped basil
2 tsp. chopped garlic
15 fluid oz. coconut milk
Salt and pepper (fresh ground)

Marinate wahoo in coconut milk and lime juice for 4 hours.

Mix coconut flakes with basil and garlic.

Bread the marinated fish first with flour, then eggs, then coconut flake mix.

Pan-fry in medium-high heat or until golden and crispy.

I need to catch a wahoo first. Then we can talk about how to cook it. BTW pan seared in butter and garlic is quite nice also.
